One of my favorite things to make in the middle of a hike is a batch of trail tacos. They’re filling, nutritious, cheap and so easy to make. No need to settle for the same, boring energy bars for every hike!
How-to
The directions for both of these recipes are the same. Take all of the ingredients that aren’t tortillas and throw them in a plastic baggie or Tupperware. The veggies will marinate and soften while you’re hiking. Whenever you stop for lunch, take out your tortillas and fill them up! Both recipes make about 3 tacos.
Black Bean Tacos
- Juice of 1/2 lime
- 1/2 tsp cumin
- 1/2 avocado
- 1/2 tsp garlic salt
- 1/2 tsp chili powder
- 1/2 tsp onion powder
- 1/4 cup black beans
- 1 Tbsp olive oil
- 1/2 cup chopped bell peppers
- 1/2 cup greens
Asian Chicken Tacos
- 1 Tbsp oil
- 1/2 Tbsp rice wine vinegar
- 1/2 Tbsp soy sauce
- 1 tsp minced garlic
- 1 cup shredded cabbage
- 1/2 avocado
